Yet another Koelsch-eh

On Sunday I brewed again - another Koelsch-eh and in fact the same recipe as last time except for 2 minor factors : (1) I adjusted the pH of the liquor by adding 1ml of 75% phosphoric acid to 58L of water, and (2) I forgot the whirlfloc in this last batch.

But basically it goes like this :

Grain Bill

  • 9 kg OiO 2 Row Malted Barley
  • 1 kg local organic flaked barley (sourced from Mountain Path)

Mashed in with a US quarts per pound ratio of about 1.25:1, with 26 qts of water at 167F to mash in for 151F. I held for 90 minutes but it was a cold day and I had the blue foam jacket mal-adjusted so it dropped to 149F during the mash, but that is A-OK for a Koelsch-style beer like a Koelsch-eh

Hops

Hopping I did differently this time around, choosing 2 ounces (4 plugs) of Cascade (7.1% AA) instead of the noble German Tettnanger I used last week. Though I guess Cascade could almost be considered "noble" for a US hop, so as far as that goes I think I am within the right spirit of the style. Besides, I still think just about the best Koelsch-eh I've ever brewed was the first batch I did on Gladstone at Kent when I first moved to Ottawa with a buddy of mine, while my wife was finishing up the year at University back in NS

I boiled the 4 plugs for 60 minutes, then added 2 more plugs after "knock out" or "turning off the heat" as it is in layman's terms.

It took about 24 hours for the first fermenter to show signs of life (video coming in next few days), and at about 30 hours the next morning, both were going really well.

Two questions on your

Two questions on your Koelsch-eh. What type of yeast did you use and where did you get it? Where do you get your phosphoric acid? I can't find it in small quantities.

yeast and acid

My house yeast is Fermentis / DCL S-189, which is a dry lager yeast that I find works extremely well in this style. Unfortunately you can only buy it in 500g bricks, and most distributors make you buy 10 bricks at a time. So we do group buys in our club once a year.

The acid was sourced for me by a buddy in a brew club in Winnipeg. I know, I know, who would have thunk? Winnipeg? :-) Sorry to anyone from there, that's just a cheap dig at my buddy. I have no idea where he got it.

I stand corrected on S-189

I am told that S-189 is now available in the 11g sachets. So you'll have to call around for them. I know that Gilbertson and Page in Montreal carries them, but they are a wholesaler - though they do now deal directly to home brewers I think but have a different price list for smaller volumes. Though you'd likely have to buy them a box at a time.
