Leftover Rice Balls
Here is a great idea for leftover rice that I picked up the other day on one of the blogs I follow - deep fried rice balls! I know, I know, it already sounds awesome, doesn't it?
So I put the bug in my wife's ear for the big container of leftover brown rice in the fridge, and she made it her own with a little twist - in addition to the cube of cheese in the middle she also mixed grated parmesan and asiagio into the rice. Wow they were great, and the kids gobbled them right up. Recipe below.
Start your deep fryer preheating to 375F / 190C
- 7 cups cooked rice (brown in our case)
- 2 eggs for the rice
- 2 eggs for the batter
- 1 cup grated Parmesan or Asiagio cheese (or mixed in our case)
- cubed cheddar or your favorite cheese.
- 1/2 cup corn meal
- salt to taste
Beat the 2 eggs for the rice and mix them into the leftovers, along with the grated cheese and the salt. Now take a couple of tablespoons of the mixture into your hands and flatten it into a circle. Put a cube of cheese in the middle and form a ball around it - adding a bit more rice mixture if required.
Once you get the balls formed, beat your other two eggs and put them into a small bowl, and put the corn meal in another small bowl. Roll each ball in the egg, then the corn meal, then carefully put it into the deep fryer. We got about 6 or 7 in there at a time.
Let them cook 5 minutes or longer if you want them browner.

not at all greasy
I should mention that they were not the least bit greasy even though they were deep fried. Must be something with the high temp, and the combination of rice and corn meal, I dunno. I was actually really surprised that they came out as though they'd been baked.
We need oil in our diets - so everything in moderation. I'm sure there must be a bit in there but it really can't be much because it did not seem like any at all.
leftover risotto
We've done something like this with leftover risotto. Didn't deep fry, but adding an egg and pan frying made an extremely tasty leftover dish.
