Simple and Yummy Turkey Casserole

Here's one I just whipped up last night that turned out way better than I'd expected! I'll definitely make it more often as it was so easy and so yummy (and so healthy)

  • 1 package (375g) of President's Choice Whole Wheat Rotini
  • 1500 ml mason jars canned turkey and chicken
  • thyme (1/2 to 1 tsp)
  • rosemary (1/2 to 1 tsp)
  • salt to taste
  • pepper to taste
  • corn starch (4 or 5 tablespoons)

Cook the pasta as per instructions, then drain.

I drained the chicken and turkey and saved the liquid and fat in a 1.5L saucepan. I topped it up to about a litre or a bit more, added salt and pepper to taste, then the rosemary and thyme. Both dried. I added 4 or 5 tablespoons of corn starch and buzzed it all with a hand blender. I brought it to a boil and boiled gently 4 or 5 minutes to make sort of a thick gravy out of it. You made need to add more cornstarch than that.

I then mixed the pasta, gravy, and chicken/turkey into a 3L saucepan, put the lid on it, and baked it for 35 minutes at 325F

The chicken and turkey is of course stuff that I canned myself. If you don't have your own canned stuff, then use about 5-6 cups of cooked and chopped chicken/turkey, and just make the gravy with water - no broth required. It will still be extremely yummy since most of the flavour is from the spices.

Now to figure out how to make this in mason jars so it cans itself while it cooks!
