Home Made Mayonnaise
I started making mayonnaise a few months ago, and as I was gathering information on how to do it, I got a lot of feedback from various people on just how finicky it can be to get it to thicken properly. They would talk about adding the ingredients in the correct order, and then drizzling in the oil slowly. And then other tricks to use if it thickens and then starts to break apart again. I tried this first in my Kitchen Aid stand mixer using the whisk attachment, and it would not turn into mayo at all. Then I tried it in my blender, and it did turn into mayo but took a very long time. Then finally I tried my hand blender and BINGO! As you'll see in this video it is almost instantaneous, and does not matter how you add the ingredients.
Here is my basic recipe :
- 1 cup oil - experiment with different combinations as any type will work
- 1 egg
- 1 tablespoon pickling vinegar
- 1 tablespoon lemon juice
- 1/2 tsp salt
- 1/8 tsp mustard powder
- pinch of paprika
As I mention in the video, my original recipe called for 1/4 tsp of mustard powder but I found that to be too much so I reduced it. It also called for more paprika. I also mention that the vinegar and lemon juice are basically mix-and-match - use any combination of any type of vinegar or lemon juice to make up 2 tablespoons. Again, experiment to see what suits your tastes.

Bacon Flavoured Mayo
Oh yeah! Replaced about 1/8 cup of the oil with bacon fat, and voila! This is really good!
Bacon fat
Interesting use of bacon fat... I just finished separating bacon fat from the other "stuff" that comes from making bacon... Have a bunch of nice and fragrant bacon fat in the fridge now !
