Better Grilled Cheese
Grilled cheese is never a 'healthy choice', but it can certainly be made a lot better if you choose a good quality whole wheat bread, and a good cheese instead of processed cheese slices. I've experimented with various ways to use good cheese, and slicing it - even thinly - does not work so well as it does not melt as well as you need to hold the two slices of bread together. But grating it works wonderfully!
I've used a number of different types of cheese, including ordinary ones like cheddar and mozza, and more exotic hard cheeses like the asiagio I used in this video. I also choose a decent margarine - even a bargain brand like this one can be good, just read the label.
If you choose quality ingredients, apply the margarine in moderation, and do not serve this too often, it can make a smart meal choice that the kids will love. Simply grate the cheese - I find that fine works best. Butter one side of each piece of bread, but apply in moderation as mentioned. Put your first slice margarine-side-down into the pan, and then carefully put the cheese onto the bread with your fingers. Once you have it spread well, apply the top piece and cook as you normally do.

That's pretty much exactly
That's pretty much exactly what I do.
I usually use a 50/50 mix of extra old cheddar for flavour and Monterey Jack or Friulano for gooey meltability.
And I pretty much always use real butter.
I'm not a fan of any synthetic butters (margarine)
I'll take my chances with the saturated fats in butter over the hygrogenated this and that in "most" margarine. The healthier margarines (non-hydrgenated fats) tend to not taste that great.
A fine balance
It's a fine balance of butter and margarine over here - one boy prefers one, the other prefers the other - on just about everything. Lately I've been using my rendered pig fat for this sort of thing, personally :-)
