Basic Dough
This yeasted dough is really easy to throw together if you have a bread machine. Actually, even if you do not, mix it together just til everything is wet and then let stand covered in a bowl for 12 hours and let the gluten develop on its own. This is a new method I've just recently seen and will be doing a video for. Missing from this video is the addition of the 1/4 cup of olive oil - somehow I managed to mess up that clip while doing the video.
Mix
- 350ml water (or beer)
- 1 (generous) tablespoon honey
Nuke it 10 seconds at a time until it is 40C, then mix in
- 1 tsp dry bread yeast
Leave for 10 minutes, then mix thoroughly
Put the water, honey and yeast mixture into the bread machine, and now add
- 1 tbsp to 1/4 cup oil - olive oil in our case since it is pizza dough. Use whatever kind you like. Experiment with 1 to 4 tablespoons (1/4 cup)
Add
- 1 tsp salt
and finally add
- 600g flour OR 3 cups + 3 tablespoons
For flour, I generally use 2 cups whole wheat, 1 cup white, and 3 tablespoons of gluten flour. Most of it is local organic (just not the gluten flour)
Let it go through your bread machine's dough cycle, then do with is as you will. This makes either 2 loaves of bread, 4 loaves of french bread, 3 thin crust pizza crusts, 2 regular crust pizza crusts, a batch of cinnamon rolls, or whatever else you can imagine.
